This fruity, yet hearty, drink at Ponyboy in Brooklyn, New York, is made with watermelon that gives it its signature pink tinge. The mezcal makes it slightly smoky, with a sweet finish from the watermelon juice. “The signature drink of Ponyboy! We rim the glass with matcha and sea salt to channel the image of an actual watermelon. Between the honey ginger syrup, Ilegal mezcal and jalapeño tincture, it’s an absolute delight,” said James Dorje, owner of Ponyboy.

Available at: Midnight Rambler at The Joule Hotel in Dallas, this cocktail is a refreshing summer highball for the fruity but ‘not too sweet’ crowd, with an Electricdust watermelon Dum Dum as a mouth numbing garnish. “Midnight Rambler’s Dance Police cocktail checks all of the boxes for celebrating Tequila Day. It’s agave-forward, fresh, balanced, and delicious. It uses flavors similar to other agave cocktails but in a unique way. The cocktail is topped off with an Electricdust covered dum dum, which is a flavor and sensation enhancing powder that, once consumed, transforms the drink into a new experience. You can batch the cocktail for a big group or make it for yourself on a warm evening while sitting by the pool or on the porch,” said Gabe Sanchez, general manager for Midnight Rambler at The Joule, Dallas.

At The Ellington on Broadway in New York City, The Boulevard is made from Absolut Vodka, Italicus, Fever-Tree Sparkling Pink Grapefruit, and orange slices. “Refreshing, delicious drink that is also dynamically colorful, yet also delicate while packing a subtle punch,” said Glenda Sansone, owner of Ellington on Broadway.
Schrute Sour

At Prohibition in Charleston, the Schrute Sour is, of course, a nod to Dwight Schrute from The Office; it’s made with beet vodka, lemon juice, a rosemary simple syrup (for aromatics and a subtle vegetal taste), and an egg white. It’s finished with blue curacao paint for a bright blue pop. Co-owner and bar manager Jim McCourt explains, “Named after Dwight from The Office and his obsession with beets. We infuse vodka with red beets, add lemon juice for brightness then balance it out with a rosemary syrup. We then shake it up with egg whites to give it a rich mouth feel.”

Rimmed with black salt and a jewel-like wedge of dehydrated dragon fruit this is a show stopping sip,” said Robert Brown, Ellie’s general manager.
French Slipper

At Mister French in New York City, this cocktail is made with Bombay Bramble gin, Ume Plum liqueur, Aperol, Oleo, egg whites, lemon, and bubbly rosé. “This bubbly, berry cocktail gives a pink twist on the classic French 75. The drink is served as a sour with a delicate frothy foam in a tall Collins glass, and of course topped with pink sparkling rosé,” said Nick Semkiw and Elvis Rosario, Managing Partners.

This cocktail is meant for celebrations! “The base spirit of this is our own proprietary gin called Celebration that was curated with a local distiller. Our gin contains notes of ginger and kaffir lime that pair perfectly with raspberry, and tonic. In the interest of making our cocktail vegan friendly we chose to use aquafaba instead of egg white to add a beautiful fluffy foam. Staying on track with our celebration theme, we called this libation Kool and the Gang, after the 60s funk band that made the song ‘Celebration,’ said Paige McGroarty, Manager at The Fed.
