Chipotle Mexican Grill is testing Mexican Cauliflower Rice at eight locations in Orange and Los Angeles counties.
Cauliflower rice is a grain-free alternative to the white or brown rice it serves in its burritos, tacos, salads and bowls. It’s made out of cauliflower chopped so finely it resembles grains of rice.
The Mayo Clinic has called cauliflower a “nutrition superstar” because it’s high in vitamin C, low in carbs and calories and has no cholesterol.
Chipotle served Cilantro-Lime Cauliflower Rice for a limited time early in 2021. So did El Pollo Loco.
Mexican Cauliflower Rice is made with sunflower oil, salt and seasonings that includes cumin, garlic and paprika, according to a news release from the Newport Beach-based chain.

Chipotle has also added a line of 1990s-themed clothing to its online merchandise store. The 1993 Collection pays tribute to the chain’s founding in Denver nearly 30 years ago. It includes an anorak, a rugby polo shirt, cap, socks and slides with Chipotle’s original logo and coloring, according to a separate news release.
The chain launched Chipotle Goods as a permanent apparel collection in August 2020, according to the company. Other branded products include beanies, pride T-shirts, onesies for babies and a foil gym duffle bag that resembles a wrapped burrito.
