Chipotle tests Mexican Cauliflower Rice in California restaurants

Chipotle Mexican Grill is testing Mexican Cauliflower Rice at eight locations in Orange and Los Angeles counties.

Cauliflower rice is a grain-free alternative to the white or brown rice it serves in its burritos, tacos, salads and bowls. It’s made out of cauliflower chopped so finely it resembles grains of rice.

The Mayo Clinic has called cauliflower a “nutrition superstar” because it’s high in vitamin C, low in carbs and calories and has no cholesterol.

Chipotle served Cilantro-Lime Cauliflower Rice for a limited time early in 2021. So did El Pollo Loco.

Mexican Cauliflower Rice is made with sunflower oil, salt and seasonings that includes cumin, garlic and paprika, according to a news release from the Newport Beach-based chain.
