Neapolitan-style pizzeria Il Locale will open the doors to its second store in Subiaco next week as the trendy business sets its sights on a further expansion across Perth.
Il Locale has built a loyal following since opening in Scarborough in January 2021, with the signature bright yellow pizza boxes flying out the door of the Calais Road shopfront every night.
The team are now putting the finishing touches on their Hay Street outlet to open on March 16, following demand from customers to bring the brand closer to the city.
Il Locale founder Mat Bourget said despite being told they were crazy to open a new business amid the COVID-19 pandemic, the risk had paid off thanks to loyal diners.
“If we were to have listened to people, we never would have opened,” he said.
“What is great is we have had massive support from the community around the shop and we have got so many locals on a regular basis that come to the shop every single week so it does help the business.”
Mr Bourget said they did not expect to be as busy and popular as they had been in Scarborough and the team were excited to join the Subiaco revival.
He now plans to open a new store across Perth every three to six months.
“We have got some locations already locked in and I am working with a real estate agent,” he said.
“Our goal is to sell more pizza than any other brand in Western Australia; this is why I wake up every single morning.”
Mr Bourget said Il Locale was focused on perfecting traditional Neapolitan style pizza using cheese, meats, flour and sauce imported from Napoli, Italy.
“We are just focusing on one product, which is the pizza, and all of the ingredients that we use are top quality,” he said.
“Every single pizza that comes out of the oven we check; if we are not sure the pizza is good enough, we do it again.
“We are so proud of our product and I think that is what has made the difference.”
To celebrate the Subiaco store opening, Il Locale will be giving away 100 free margarita pizzas from 3pm on March 16.
