‘Easiest ever’ cottage pie recipe – ‘the ultimate twist’

As the autumn days set in, there’s no better way to warm up than with a delicious, home-cooked meal. However, with busy jobs, household tasks and social or family lives to compete with, many Britons simply don’t have time to get down to cooking food from scratch.

That’s where Sorted Food comes in, with their “ultimate twist” on a traditional cottage pie.

A cottage pie is traditionally a savoury dish of cooked beef and vegetables, topped with mashed potato and then baked.

However, not only has Sorted Food swapped the meat for a vegetarian-friendly alternative, they’ve also made the dish speedier to make with another, unique substitute.

A spokesperson for the brand told Express.co.uk: “Chefs at Sorted Food have put the ultimate twist on the classic dish Cottage Pie, by swapping out mash for gnocchi…time-saving but just as delicious.

“The perfect thing to whip up now the nights are drawing in or when you’re in a rush but craving something warm and comforting.

“It is also veggie so an ideal choice for those looking to cut back on their meat intake.”

By substituting the mashed potato for gnocchi, you can eliminate the time needed to boil and mash potatoes yourself.

Sorted Food shared a step-by-step recipe to make the cottage pie yourself at home.

Step one: Fry the mince

Tip four tablespoons of oil into a large frying pan and place it over a high heat.

Once the oil begins to simmer and loosen, carefully lower in 400g of veggie mince.

Fry for five to six minutes, breaking up the mince and stirring as you go, until crisp and golden in places.

Cut five spring onions into three, then peel and mince two cloves of garlic while you wait.

Step two: Add the onions and garlic

Once the mince is ready, tip in the onions, garlic and a generous pinch of salt.

Fry for a further three to four minutes, until softened slightly and very fragrant.

Step three: Add the Tomato Paste

Add one tablespoon of tomato paste to the pan and fry for a further minute or so, until darkened and sticky.

Preheat the grill to its highest temperature while you wait.

Step four: Add the water

Tip in 400ml of water, one stock cube and two tablespoons of soy sauce.

Give everything a stir and season to taste with salt.

Step five: Assemble

Lay 500g of gnocchi over the mince so it forms one layer on top, then coarsely grate over 75g of cheese.

Step six: Grill it up

Whack the whole pan under the grill for six to eight minutes, until the cheese is melted and golden.

Get on with the spinach in the next step while you wait.

Step seven: Cook the spinach

While the cottage pie grills, melt 20g of butter in another large frying pan over a medium-high heat.

Once the butter starts to foam, lower in 200g of spinach – it may look like a lot at this point, but it will wilt down.

Fry the spinach in the butter for two to three minutes, tossing occasionally until the leaves darken and wilt.

Season to taste with salt and plenty of black pepper. If you are still waiting for the cottage pie, now would be a great time to crack on with a bit of washing up.

Step eight: Serve

Once the cottage pie is ready, take it to the table with the pan of spinach and serve up from there.
