Famed Canadian Chef John Higgins recalls his career in the Royal household

With the news of the passing of beloved Queen Elizabeth II, memories came flooding back quickly for Canada’s own Chef John Higgins. The Food Network star and director of the renowned George Brown Culinary school in Toronto – who was born in Scotland –  spent a considerable part of his career cooking for the Royals both at Buckingham Palace and on the Royal Yacht  Britannia, as they entertained countless heads of state and celebrities.

And, not only did he cook for the royals, but he danced with them, too.

Higgins’ memories included “dancing with the Queen Mum at one event, and observing the occasion of Princess Anne’s marriage at another event. I also remember meeting Diana and Charles and their boys …this is a really nice family,” he added sadly, his voice still rich with his Scottish brogue.

“I remember when the Queen Mum, when she turned 90, and I remember when her daughter turned 90,” Higgins added, when contacted about the passing of the queen, recalling his days in royal circles. “Face to face, in the flesh, they do look different. They look – well, like ordinary folks! But I recall how very warm and gracious and courteous they all were. There was a level of trust on  all fronts.”

As for what they ate, Higgins said they enjoyed the whole farm-to-table style of eating, using fresh ingredients – “the Royals wanted good, local food, cooked well – food without fluff.”

The royal repasts were simple and wholesome, said Higgins – but hold the garlic: “Queen Elizabeth, in particular, made sure there was no garlic in the dishes. They didn’t eat garlic, probably as they were constantly meeting and greeting people.”

Higgins spoke of how “down to earth” and “kind” the family was. “I was very lucky to have worked for the Royals.”
