Ever notice that the designated Hanukkah latke maker spends the entire holiday standing, frying and flipping, only to miss out on the joy of sitting down to a hot, crispy potato pancake? Micah Siva did. The San Francisco food photographer and recipe developer behind Nosh with Micah created this family-style latke to solve that totally unjust issue.
This large, shareable latke starts and ends on the stovetop, but a 10-minute bake in the oven ensures the inside of this carb lover’s dream is cooked through and crispy. Siva suggests serving slices for brunch, with the traditional sour cream and apple sauce, a poached egg or smoked salmon.
Family-Style Skillet Latke
Serves 4 to 6
INGREDIENTS
3 large russet potatoes, scrubbed
1 small white onion, grated
2 tablespoons parsley, chopped
1/3 cup matzo meal
½ teaspoon sea salt
¼ teaspoon black pepper
3 large eggs
4 tablespoons vegetable oil, divided
Applesauce and/or sour cream, to serve
DIRECTIONS
Heat the oven to 350 degrees. Using the large holes of a box grater or a food processor fitted with the shredding disc, grate the potato and onion.
Transfer to a clean kitchen towel and wring out excess liquid. This helps the latke get crispy! Don’t skip this step.
Add the potato and onions to a bowl, and stir in parsley, matzo meal, salt and pepper.
In a small bowl, whisk the eggs. Add to the potato mixture.
Heat three tablespoons of oil in a skillet over medium heat until shimmering, about 5 minutes. To test the temperature of the oil, add a small piece of the potato to the pan. If it sizzles, it is hot enough! Add the potato mixture, pressing down firmly with a spatula so that it covers the bottom of the pan evenly. Cook for 4 to 5 minutes or until it begins to brown.
Transfer the skillet to the oven, and let cook for 8 to 10 minutes, or until the bottom is crisp and golden.
Remove the skillet from the oven. Cover with a plate and flip the latke onto the plate. Add the remaining tablespoon of oil to the pan. Slide the latke, cooked side up, back into the skillet and return to the oven for about 8 to 10 minutes, or until golden.
Slice and serve with applesauce or sour cream.
