Last Crumb Is About To Drop Its First Ever Gluten Free Cookie Collection

The most exclusive cookie company on the market, Last Crumb has officially announced its first-ever gluten free collection. That’s right, the viral cookie company that often sells out in mere minutes has created a line of completely gluten free cookies that are just as gooey, chunky, and delicious as their gluten-filled counterparts.

Last Crumb’s cookies are made from scratch weekly, using super high quality ingredients including a homemade European butter mixture, handpicked vanilla, and french chocolate cut into bite-sized pieces. The cookie dough rests for a full 24 hours before baking into beautiful shareably large cookies that are packed in the most photo-worthy boxes with witty, impossibly cheeky tasting notes on each cookie’s wrapper.

After receiving a ton of feedback pleading for gluten free cookies, the Last Crumb decided they were up for the challenge. Knowing gluten free cookies are often subpar and not always delicious, the Last Crumb team was determined to find a way to avoid that stereotype. In a world where most gluten-free cookies are flat and crunchy, Last Crumb worked tirelessly to make sure theirs would be just as good as their non gluten-free cookies and will have that same thick, rich texture and taste the brand is known for.

Made using Original Sunshine gluten-free flour, each box features a dozen oversized cookies with three of each of the four flavors:

  • I Lava You – described as “a chocolate-y explosion” or “molten lava gluten-free masterpiece,” it’s made with milk, dark, and Dutch chocolate with an ooey-gooey chocolate core made of ganache.
  • Birthday Boohoo – their version of a birthday cake cookie, it’s made with cake batter, caramelized butter, vanilla frosting, and a ton of sprinkles
  • Thicc Boy – listed as a “peanut butter thunderstorm in your mouth,” this baby is made with all natural peanut butter, peanut butter cups and chips, peanut butter swirl, milk chocolate, and a hint of salt
  • Grandma’s Last Stand – “a chocolate chip cookie so good your grandmother will disown you” made with three kinds of chocolate (both chips and chunks), caramelized butter-based dough, and a pinch of coffee and salt to balance the sweetness.

I sat down with co-founder of Last Crumb, Alana Arnold, to chat about the upcoming gluten free drop and here’s what she had to say.

Amber Love Bond: What made you decide to make gluten-free cookies?

Alana Arnold: Never say never, right? Our Last Crumb community is super important to us, and we are constantly gathering their feedback to inspire new flavors and drops.. So many of our friends, family, and customers have been asking for great tasting gluten free desserts, so it made sense for our next collection to be Gluten Free. We knew we had to create something that catered to that audience and tasted just as good as our original recipe. There’s too many dry, tasteless gluten free cookies on the market currently, so we had our work cut out for us. And the result speaks for itself.

Last Crumb’s Gluten Free Collection turned out better than even the gluten eaters among us could have ever expected. I know I’m biased, but everyone who has had a sneak peek agrees that these are the most delicious, rich, and gooey gluten-free cookies around. Last Crumb has become synonymous with decadence since we launched in 2020, and our Gluten Free Collection carries on that legacy.

ALB: How often do you think you’ll feature gluten-free cookies?

AA: Special collections like this gluten free one are available for a limited time only, so we encourage everyone who wants them to get on our list for the drops. Last Crumb’s Gluten Free Collection will drop on our website three times during the month: on April 12th, 19th and 26th, and we expect it to sell out fast — I definitely recommend signing up for emails and texts so that you get notified as soon as it drops. We tend to bring back collections based on popular demand, so that is generally how we’ll determine whether the Gluten Free Collection will make another appearance in the future.

ALB: Are all of the cookie flavors versions of already released cookies (like the lava one?) or did you create new cookies?

AA: We’ve taken four of our most iconic classic flavors and put a gluten-free twist on them using Original Sunshine gluten-free flour. Each box comes with a dozen indulgent cookies in flavors we’ve given fun names to like I Lava You, which is a chocolate lava cookie; and Birthday Boohoo, a play on a birthday cake cookie.

ALB: Was there much trial and error involved when working on these recipes?

AA: Absolutely! This was a labor of love. We set out to not only make the best gluten-free cookies to ever exist, but to make these cookies so good that even people who aren’t gluten-free would come back for seconds. We don’t settle at Last Crumb, so we made sure to source the finest ingredients and wouldn’t compromise on taste or texture until we got it right. This meant partnering with Original Sunshine and using their first-of-its-kind gluten-free wheat-based flour made with regeneratively farmed ingredients. It also takes a lot of taste-testing, but luckily we have a team that’s up for that challenge!

ALB: Do you have a favorite of the flavors?

AA: Peanut Butter (Thicc Boy) is my favorite. It’s great in its original form and as gluten free I think it’s possibly even better! The gluten free flour makes the texture really soft and our peanut butter uses 100% peanuts, so the flavor really shines through and it’s a perfect, soft, gooey to crunch ratio. Throw in some chocolate and it’s just a really cool elevated cookie that still has that homemade vibe. And now it comes gluten free!
