Before meeting Prince Harry, Meghan, Duchess of Sussex ran a lifestyle blog called The Tig where she shared helpful recipes and commented on fashion and travelling. One such recipe was a grilled shrimp caesar salad which Meghan makes on the grill, including the romaine lettuce.
In 2016, the Duchess of Sussex went on The Today Show on NBC to demonstrate how to make the grilled salad, which she called “really simple”.
The then-host of The Today Show, Matt Lauer, introduced the Duchess by saying: “We’re making something unusual here, people don’t think of this. We’re talking about salad on the grill!”
Ingredients for Meghan’s grilled shrimp caesar salad
For the shrimp:
450 grams of deveined and peeled shrimp
One teaspoon paprika
One tablespoon of chopped garlic
One teaspoon honey
One pinch of red chilli flakes
One teaspoon of Italian seasoning
One squeeze of fresh lemon
Extra-virgin olive oil
Salt and pepper to taste
For the salad:
Four big chunks of romaine lettuce
Extra-virgin olive oil
Salt to taste
One squeeze of lemon juice
Store-bought caesar salad dressing or balsamic vinaigrette
Croutons for garnish
Shredded Parmesan cheese
Method
Add all the ingredients for the grilled shrimp to a bowl. The shrimp should be mixed and marinated for an hour in the fridge.
Meghan claimed if you bring the shrimp to room temperature after removing it from the fridge, this helps the protein not become “tough”.
For five minutes, grill the marinated shrimp over high heat, flipping them as they sear.
Four romaine lettuce chunks should then be cut lengthwise and used in the salad.
To do this, fans must place the romaine hearts on the grill, cut-side down on the outermost part of the grill for about a minute or two.
Then take off the grill after a nice char has formed. Fans can then add an extra drizzle of olive oil and a squeeze of lemon.
If royal fans wish to cook a vegetarian version of the salad without shrimp, Meghan says to just add a drizzle of their preferred salad dressing, whether that be balsamic vinaigrette or caesar dressing, plus smashed croutons for texture and Parmesan cheese.
These extra ingredients are fantastic in a caesar salad, with or without any protein element such as grilled shrimp or chicken.
