Seattle’s most stylish cocktail bar serves up its hot take on the classic treat that’s just been discontinued after 40 years of satisfying sweet summer cravings. Let’s take a look at what makes canon’s Choco Taco so cool.
Tongue in cheek
The menu at this award-winning bar on Seattle’s Capitol Hill sets the tone of this establishment. Yes, there are some very serious spirits on the shelves and that high-end, meticulously made booze can be turned into dazzling drinks.
But the place — smoothly run by Jamie Boudreau and his deeply talented team — is far from stuffy.
Take the standard “don’t eat raw eggs” kind of warning, for instance. This is how it’s laid out at canon:
“Alcohol, eggs, sex, undercooked foods and most enjoyable things in life can and will kill you if you give them enough time. Live life to the fullest until then.”

Eat dessert first
Yes, the headline grabbing news that Klondike planned to 86 its long-beloved ice cream novelty was met with a monumental meltdown across social media outlets.
CNN broke the news with the official word from the ice cream company: “Over the past two years, we have experienced an unprecedented spike in demand across our portfolio and have had to make very tough decisions to ensure availability of our full portfolio nationwide,” a Klondike Brand representative told CNN Business in an email, adding “we know this may be very disappointing.”
Soon, the hashtag #chocotaco was trending on Twitter, the grief on the treat’s passing palpable: “RIP chocotaco” “Take the Klondike bar instead” “I’ll miss you forever, Choco Taco”…
Though, it’s a far cry from the original — in the best possible way — the Choco Taco lives on at canon, where it’s described on the menu as “toasted cashew, bourbon caramel, spiced dark chocolate.” In other words, an homage to the original, but way, way better. Especially with a snifter of something rare and single malt on the side.
When canon tweeted its tribute, you can be sure it got some laughs, maybe even a spit take. But it also served as a reminder that this now landmark watering hole manages to keep tongue-in-cheek while staying fresh and relevant on the ever-changing culinary landscape. Bravo!
