How serious is entrepreneur Phebe Shen about authenticity?
The owner of the aptly named Serious Dumpling and her team devoted a lot of time — and miles — to perfecting their plans before opening their hip new restaurant at San Pedro Square in downtown San Jose.
The signature bun here is the sheng jiang bao, or SJB, a meaty, pan-fried cousin of the more widely known XLB. “We spent months inventing the recipe for SJB to make the perfect dough and crispness,” she said. “My chef even went back to China to learn how to make it back in 2019, and that’s how we started this concept.”
With partner Chris Yeo of the Straits restaurant group, Shen selected a spot next to Modera, the square’s new residential project, and the Tabard Theatre, and created a space that features a fun pop-art vibe, thanks to the hot-pink neon and yellow bulb design elements.
The SJB come filled with pork, beef, pork-shrimp or vegetables (spinach, carrot, shiitake mushroom, tofu). Besides those signature buns, the other customer favorites have been the XLB soup dumplings and the garlic noodles. New additions to the menu include chicken potstickers and a braised, sliced beef appetizer.
For those who want beer and baseball with their buns, there’s bar seating facing the TV screens. Serious Dumpling offers three beers on tap and six sake.
