Fruit dessert recipes for summer
Chef Mukesh Kumar and Gagan Anand, Founder, Scuzo Ice ‘O’ Magic, shared with HT Lifestyle, some cooling fruit dessert recipes that are perfect for summer.
1. Chatpata jamun popsicle

Ingredients:
Fresh raspberry 120 gm
Water 200 ml
Lemon juice 10 ml
Sugar 30 gm
Liquid glucose 20 gm
Method:
1. The process for making chatpata jamun popsicles starts by combining water, sugar, lemon juice, and liquid glucose in a bowl.
2. The mixture is then cooked on low flame for at least 10 minutes. After that, allow the mixture to cool in the chiller for 10 minutes at 2-to-4 degrees celsius temperature.
3. Meanwhile, in a mixer, blend the Jamun slices.
4. Once the mixture has cooled down, it is poured into moulds, followed by pouring the blended Jamun slices.
5. The mixture is then frozen for 1 hour. Finally, sprinkle some chat masala on the popsicles before serving.
2. Masaledar amrood popsicle

Ingredients:
Pink guava 120 gm
Water 200 ml
Lemon juice 10 ml
Sugar 30 gm
Liquid glucose 20 gm
Method:
1. For masaledar amrood popsicles, put water, sugar, lemon juice, and liquid glucose in a bowl and cook on low heat for at least 10 minutes.
2. The mixture is cooled down in the chiller for 10 minutes at 2-to-4 degrees celsius temperature.
3. Pink guava slices are blended in a mixer and placed into the moulds along with the mixture. The moulds are then frozen for 1 hour.
4. Finally, before serving, sprinkle some chat masala to add a twisty combination of unique sweet and spicy taste.
3. Raspberry sorbet cup

Ingredients:
Fresh raspberry 120 gm
Water 200 ml
Lemon juice 10 ml
Sugar 30 gm
Liquid glucose 20 gm
Method:
1. To make a raspberry sorbet cup, combine water, sugar, lemon juice, and liquid glucose in a bowl.
2. The mixture is then cooked for at least 10 minutes on a low flame.
3. After that, the mixture is allowed to cool in the chiller for 10 minutes at 2-to-4 degrees celsius temperature.
4. Fresh raspberry chunks are mixed and blended with fresh lemon juice.
5. Once the mixture has cooled down, it is poured into moulds and frozen for 1 hour. The sorbet is then ready to serve.
