Without a doubt, Thanksgiving is the best dining day of the year. It’s all about preparing food, eating it, sharing it with others, and enjoying it while remembering old family stories and recipes and savouring some flavours that we only get to experience once a year. The classic Thanksgiving meal, complete with turkey, stuffing, all the potatoes, and enough gravy to top it all off. And don’t forget to leave space for several pies as dessert. In an interview with HT Lifestyle, Chef Sandip Hazari, Pastry Chef, Conrad Pune, shared some delicious traditional Thanksgiving recipes that you must try.
1. Parisian Flan
Serves: 8 pieces
Ingredients:
Parisian Flan Mix
Milk 750 ml
Sugar 250 gm
Vanilla bean 1 gm
Corn starch 90 gm
Cream 250 ml
Yolk 4
Whole egg 1
Sweet paste
Butter 250 gm
Flour 365 gm
Icing Sugar 125 gm
Egg 2
Salt 1 gm
Vanilla Bean 1 gm
Method:
Parisian Flan Mix
1. Put all the ingredients together in a mixing bowl and mix them well.
2. Pour the mixture into the desired flan mould, lined with sweet paste, and bake at 200 C for 40 minutes.
Sweet Paste
1. Cream butter and icing sugar.
2. Now add egg and vanilla bean with the egg and sugar mixture.
3. Mix the flour into it.
4. Keep in the fridge for at least 2 hours, and then line over flan mould.
2. Brioche pudding, Brandy sauce
Serves: 8 pieces
Ingredients:
Brioche bread
Milk 25 ml
Yeast 20 gm
Eggs 5
Salt 10 gm
Sugar 50 gm
Gluten 5 gm
Flour 500 gm
Soft butter 250 gm
Vanilla bean 1
Soaked Raisins 170 gm
Custard Mixture
Milk 100 ml
Sugar 1 gm
Egg 5
Vanilla bean 8 gm
Brandy Sauce
Egg yolk 2
Dairy cream 150 ml
Breakfast Sugar 35 gm
Brandy 30 ml
Method:
Brioche Bread
1. Make a brioche dough by mixing all the above ingredients and keep the dough on the table for 30 minutes.
2. Now cut the dough and shape it, and then put it in the bread mould.
3. Let the bread proving for another 35 minutes and put it for baking.
4. Bake at 180 C for 25 minutes, and keep the bread on a cooling rack.
Brioche Pudding
5. Slice the bread and line over desired food pan.
6. Soak the bread slice with the above custard.
7. Bake at 180 C for 25 to 30 minutes over a double boiler.
Brandy sauce
8. Boil cream and half of the sugar, and mix half of the sugar with the egg yolk.
9. Now add the egg yolk and sugar mixture with the above mixture and cook until the cream gets thick in consistency, and mix the brandy when the mixture gets cold.
10. Pour the brandy sauce over the pudding and serve.
3. Mince Pie
Serves: 8 pieces
Ingredients:
Minced Pie Mixture
Chopper Apple 500 gm
Cinnamon Powder 1 gm
Ginger powder 1 gm
Cashew nut 100 gm
Raisins 100 gm
Black currant 100 gm
Dried cranberries 50 gm
Prune 50 gm
Almond slice 100 gm
Dried apricot 50 gm
Alcohol 300 ml
Sweet Paste
Butter 250 gm
Flour 365 gm
Icing Sugar 125 gm
Egg 2
Salt 1 gm
Vanilla Bean 1 gm
Method:
Sweet Paste
1. Cream butter and icing sugar.
2. Now add egg and vanilla bean with the egg and sugar mixture.
3. Mix the flour into it.
4. Keep in the fridge for at least 2 hours, and line over a tart mould.
Minced Pie mixture
5. Cut all the dry fruits and soak them in alcohol overnight.
6. Now add peeled chopped apple and spice powder along with the alcohol-soaked fruits.
7. Put the mixture in a sweet paste-lined tart mould.
8. Bake at 180 C for 25 minutes.
4. Honey Pecan Nut Tart
Serves: 8 pieces
Ingredients:
Tart Mix
Honey 130 ml
Melted Butter 180 gm
Brown Sugar 225 gm
Eggs 2
Sponge Crumb 160 gm
Pecan Nuts 375 gm
Fresh Cream 130 ml
Pecan Nut for garnish 100 gm
Ginger powder 1 gm
Sweet Paste
Butter 250 gm
Flour 365 gm
Icing Sugar 125 gm
Egg 2
Salt 1 gm
Vanilla Bean 1 gm
Method:
Sweet Paste
1. Cream butter and icing sugar.
2. Now add egg and vanilla bean with the egg and sugar mixture. Mix the flour into it.
3. Keep in fridge for at least 2 hours, and then line over a tart mould.
Honey Ginger tart Mixture
4. Put Honey, melted butter, brown sugar, eggs, and fresh cream together in a mixing bowl and mix well and add the pecan nuts.
5. Pour the mixture into a sweet paste-lined tart mould.
6. Arrange the Pecan nut over the tart mixture and bake at 180 C for 25 minutes.
