After four years establishing themselves as a top sushi destination in Denver, the team behind RiNo’s Uchi is planning a second local restaurant opening, this time in Cherry Creek.
Uchiko is slated to open in early 2024 at 299 Fillmore St., Hai Hospitality announced Wednesday in a press release. The Uchi spinoff will feature a fresh raw bar just like the original award-winning restaurant.
More wood-fired menu items and charcoal-grilled yakitori will be available to order. And a Japanese whisky selection and customized classic cocktails will be prominent on the bar menu.
Colorado-based Semple Brown and Texas-based Michael Hsu Office of Architecture are working together on the design and build-out. Once completed, in about a year-and-a-half, the new restaurant will seat 175 people and include an outdoor patio at the corner of Fillmore Street and Third Avenue.
James Beard Award-winning chef Tyson Cole started Uchi in Austin in 2003. He went on to open three more lasting concepts — Uchiko, Uchiba and Loro — which are spread around Austin, Dallas and Houston. So far, Uchi is the only brand that has expanded outside of Texas, into Miami and Denver.
