It theorised why ultra-processed foods have the effect they do.
“Recent meta-analyses show significant dose‒response associations between the dietary share of ultra-processed foods and increased risk of noncommunicable diseases, such as diabetes, cardiovascular diseases, and cancer as well as all-cause mortality,” the study says.
“Multiple mechanisms for these associations have been postulated, including typical attributes of ultra-processed foods such as low satiety potential, high glycaemic loads, higher presence of additives, and contaminants newly formed during processing or released from synthetic packaging.
“In addition, ultra-processed food has been associated with the overall deterioration of nutritional dietary quality and increased risk of obesity.”
