There’s probably few things more elegant than starting a meal with a bump of caviar and a glass of Champagne. But for those who are trying to live a plant-based lifestyle, this is one bit of dining opulence that has not been available – until now, that is.
Crossroads Kitchen at Resorts World Las Vegas recently opened on the Las Vegas Strip as the stretch’s first fully plant-based upscale restaurant. Being plant-based among a sea of fancy restaurants offering luxurious experience such as the aforementioned caviar bumps, there’s the need to get creative and find a way to up the ante.
But in a realm where people are plant-based, how does one recreate the experience of enjoying a dollop of caviar that was eaten off one’s hand? Well, this is where things get really interesting – and creative. Crossroads has debuted Chef Tal Ronnen’s twist on the caviar bump with a rather smart and sustainable vegan take. In Chef Ronnen’s vegan twist on the tradition, the “caviar ” is made of kelp. This plant-based alternative still has the briny, salty, sea-like flavor that we love about caviar, but while staying totally vegan. The 10-gram bump is paired with a glass of champagne for $28/per person or with the option of vodka for $32 per person.
“We’ve always felt that eating plant-based shouldn’t have to be a sacrifice or a step down,” said Crossroads Kitchen Chef and Founder Tal Ronnen. “We love being able to provide people, whether they’re plant-based eaters or not, with the same experience they’d receive at their favorite fine-dining restaurants. We like to get creative and since the Kelp Caviar has been such a hit in Vegas, we thought it would be fun to put a vegan spin on this fun food trend,” said Ronnen.
The caviar bump food trend has been as curious as it is popular. It’s a way of enjoying something very expensive and at times unapproachable in a portion size that makes it far more affordable and accessible. It’s exactly what so many of us crave when dining at an upscale restaurant: Opulence that still feels comfortably within reach.
An added bonus to the vegan take on the caviar bump is that kelp is loaded with vitamins, minerals, and all kinds of nutrients. So even when we are having a fancy night out, we’re doing something good for our body, too. It’s also something to consider as so many oceans are suffering from overfishing. If we can enjoy this delicacy in a more sustainable, but still delicious, way, why wouldn’t we?
They may just be onto something.
