Make fruity English scones in an air fryer with just four ingredients

Fruit scones are a tea-time staple, best enjoyed with lashings of cream and jam loaded on top.

But no matter how they’re eaten, the doughy treats always taste better when warm and homemade. And it’s very easy to do with just four ingredients.

There’s no need to spend a fortune on ingredients or spend hours in the kitchen either, in fact, there’s an easy method that can be followed in just 10 minutes using an air fryer.

Sharing her clever recipe on TikTok, budget-friendly cook @thismumcooks revealed how to make a batch of four for just 50p.

While she used blueberries and bananas, any fruit can be substituted into the quick recipe.

The avid home cook started by mashing the banana into a bowl, noting that she makes the scones “as if it were banana bread”.

She added: “The softer, the blacker the banana, the better for this because we want to break it down into a mush so there aren’t any big lumps in the scones.”

Next, @thismumcooks added the Greek yoghurt before giving it a good mix to combine the ingredients. To thicken the mixture the TikTok chef poured in some self-raising flour (roughly one cup) before stirring again.

She explained: “I just add some self-raising flour, mix, and then see how the consistency of the scones is coming out. If you need to add some more, then add some more. It’s really about finding the right consistency depending on the consistency of the yoghurt you’re using.”

The mixture should resemble a thick dough once the flour has been added, at which point it should still be moist but not wet.

Once the dough is ready, flour a clean work surface before rolling it out. This can also be done with the palm of your hand, according to the TikTok chef, as long as the thickness is correct before cutting the scones.

Once divided into four equal rounds, place the scones into a clean air fryer basket and cook for 10 minutes at 190C.

The results should be thick scones with fruit “oozing out”. The home cook said: “With the banana, they smell incredible and they’ve got no added sugar to them. They smell incredible, so soft and they taste absolutely delicious.”
