There is not much more divine than unfurling in front of the sofa with a slice of cake and a cup of tea.
And while all the major supermarkets have plenty of yummy shop-bought cakes on offer, making them at home is much more fun.
Baking and decorating a homemade cake can take hours, and while it’s a very rewarding process sometimes bakers just want an easy dessert.
Enter microwave mug cake, described by BBC Good Food as a “quick chocolate fix”.
This recipe serves one and is a perfect treat for a quiet night in. Or, have some guests over and make enough microwave mug cake for everyone.
Ingredients
Four tbsp self-raising flour
Four tbsp caster sugar
Two tbsp cocoa powder
One medium egg
Three tbsp milk
Three tbsp vegetable oil or sunflower oil
A few drops of vanilla essence or other essence (orange or peppermint work well)
Two tbsp chocolate chips, nuts, or raisins etc (optional)
Method
1. Add the self-raising flour, caster sugar and cocoa powder to the largest mug you have, before mixing the ingredients together. It’s important that it’s a big mug as this will prevent it from overflowing in the microwave.
2. Add one medium egg and mix in as much as you can. It’s fine if there’s still dry mix left at this stage.
3. Add the milk, vegetable or sunflower oil and vanilla essence and mix until smooth. Add in chocolate chips, nuts, or raisins if you fancy it, and mix again.
4. Pop the mug in the middle of the microwave and cook on High for one and a half to two minutes, or until it has stopped rising and is firm to the touch.
