Recipe for ‘delicious’ chocolate muffins made in the air fryer in 12 minutes

The air fryer has overtaken the microwave as the most popular appliance in the kitchen, and almost everything can be cooked in it. So instead of turning on your oven to bake muffins, use the air fryer.

The recipe comes from BBC Good Food and takes 10 minutes to prepare, with an easy rating. It serves six to eight but you “can double the mixture to make more”.

Ingredients: 

  • 60ml vegetable oil
  • 75g natural yoghurt
  • One egg
  • Two tbsp milk
  • 100g golden caster sugar
  • 150g self-raising flour
  • A quarter of a tsp bicarbonate of soda
  • 75g blueberries, chocolate chips or dried fruit

Method: 

1. Preheat the air fryer to 160 degrees Celsius for two minutes. Meanwhile, mix the oil, yoghurt, egg and milk in a large bowl. Then fold in the sugar, flour and bicarbonate of soda and combine well. Fold in the blueberries, chocolate chips or dried fruit.

2. Spoon the mixture into silicone cases or an air fryer muffin tin filled with paper cases to three-quarters full. You should be able to make six to eight muffins, but you might have to bake them in batches.

3. Place the cases or tin in the air fryer basket and cook for 12-15 minutes until the muffins are golden brown, and a skewer inserted into the centre comes out clean.

You can use paper cases, but they will need to be put into an air fryer tin or muffin tin as they’re not as sturdy as silicon cases.

As for how successful this recipe is, JaneyE said her muffins were “delicious”.

She added: “I use the basic recipe and chop and change the filling and toppings…rhubarb, mocha, strawberries, and today I’m trying choc chip and might try a marble effect. I also do four at a time then – since it’s so quick to do, keep the mix in the fridge and do them a few at a time as needed.”

Another person reviewed the recipe: “These were nice, the mixture was runny and wasn’t sure if it was going to work however they turned out lovely.”

Laura said: “Easy and delicious. Perfect every time.” And Anne added: “Quick and easy to make. Light and fluffy and tasted delicious, I did turn down the temperature after 4 mins to 150 degrees and they were just perfect.”
